A Ton Of Recipes

Sophie, Mom, Grandma, Robbie and I all went on an adventure tonight. We spent the evening poking through Salvation Army and Goodwill! Sophie found an amazing cookie jar at Goodwill that had a bunch of recipes stuffed in it. She decided someone must have died and someone else was going through their house getting rid of things and the cookie jar was expendable. I agree. Anyways she didn't really like any of the recipes but I found quite a few that look interesting. I don't really want to copy them all over by hand (cause the paper is kinda icky and smelly) and I also don't want to save them on my husbands computer because he re-formats ALL THE TIME. The next best thing is to post them here, on our cooking blog that never gets used! Here goes.

Chicken and Cheese Casserole (Weight Watchers - 6 points per serving)
2 cups cooked macaroni
2 cups coarsely chopped cooked skinless, boneless chicken breasts
2 cups canned condensed cream of mushroom soup
2 cups fat-free milk
8 ounces low fat cheddar cheese, cut into small cubes

Preheat oven to 350°F. In large casserole, combine all ingredients, mixing well. Bake, covered 35-45 minutes. Remove cover, bake 10-15 minutes longer. Serve immediately.

Shredded Chicken (Slow cooker for sandwiches)
4-5 chicken breasts
1 can chicken broth
1 can cream of chicken soup
1/4 onion
1 clove garlic
salt & pepper
potato chips (med bag)

((Cook in crock pot on low for 8-12 hours, makes 8-12 sandwiches))
put chicken breasts in crock pot, add salt, pepper, garlic and onion. cook for 8-12 hours. pull chicken apart with fork. add broth and soup and chips (yuck?), cook for another half hour in crock pot until desired consistency.

Urban Legand Neiman-Marcus Cookie Recipe
(Recipe may be halved):
2 cups butter
4 cups flour
2 tsp. baking soda
2 cups granulated sugar
2 cups brown sugar
5 cups blended oatmeal (measure oatmeal and blend in blender to a fine powder)
24 oz. chocolate chips
1 tsp. salt
1 8 oz. Hershey bar (grated)
4 eggs
2 tsp. baking powder
3 cups chopped nuts (your choice)
2 tsp. vanilla

Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet..Bake for 10 minutes at 375 degrees. Makes 112 cookies.

Pumpkin Crunch (by Rose Fitz)

1 large can pumpkin
1 can evaporated milk (large)
3 eggs
1 t. salt
1 T. cinnamon
1 cup white sugar
1 box yellow cake
1 cup chopped nuts
2 sticks margarine, melted

beat eggs. mis first 6 ingredients together. pour into a greasted 9x13 pan. sprinkle cake mix over top and sprinkle nuts over cake mix. pour melted margarine over nuts. pake at 350 for 50-60 minutes.

Pumpkin Pie Squares (by Rose Fitz)

1/2 c quick oats
1 stick margarine
.5 c. brown sugar
1c flour

1 can pumpkin
1.5c sugar
1 can evaporated milk
2 eggs slightly beaten
.5t salt
1t cinnamon
pumpkin pie spice

1/2 c brown sugar
1/2 cup chopped nuts
2t margarine

mix first 4 ingredients and spread in greased 11x13 pan. bake at 350 for 15 minutes.
mix other ingredients and pour over oat mixture. return to oven for 20 minutes.
make a topping by mixing brown sugar, nuts and margarine and crumble over pumpkin. return to oven again for 15-20 minutes. cut in squares and serve with whipped cream.

3 10.5oz cans of bean dip
1 c sour cream
2/3 c mayo
1 pkg taco seasoning
4oz can chopped green chile peppers
4 med sized ripe avocados
2T lime juice
1/4 t garlic pwd
8oz shredded sharp cheddar cheese
6oz can pitted, chopped olives
2 c diced tomatoes
tortilla chips

"Grandma's Raisin Cookies"
2 c. flour
1.5 t baking powder
.5 t salt
.5 c butter
1 c sugar
1 egg well beaten
1 t vanilla
1 T milk or cream

mix dry and liquid, chill at least 1 hr, bake at 375, 8-10 min. use a glass to cut a top and bottom. put raisins on bottom, place top and pinch top and bottom together.

Death by chocolate cookie
16 squares of semisweet baking chocolate, divided
.75 c brown sugar
.5 c butter
2 eggs
1 t vanilla
.5 c flour
1/4 t baking pwd
2 c chopped nuts

preheat oven to 350. coarsely chop 8 squares of chocolate, set aside. microwave remaining 8 squares in large bowl on high 1-2 minutes. stir till melted and smooth. stir in sugar, butter, eggs and vanilla. stir in flour and bking pwd. stir in reserved chocolate and nuts. drop by 1/4 cupfuls onto ungreased cookie sheets. bake 12-13 minutes or till cookies are puffed and feel set to the touch.

bread pudding

2 c bread cut into chunks
1 t vanilla
2 T butter, melted
4 c whole milk
2 eggs
.5 c sugar
.5 t salt

bake in .5 qt casserole dish

in a large bowl, beat eggs and add milk, sugar, vanilla and butter. mix well. pour over bread. bake at 350 for 45 minutes.

sweetheart trifle

1 package chocolate cake mix
1 package peanut butter chips
4-1/4 c cold milk, divided
.5c whipping cream
1/4 t vanilla
2 packages (5.9oz each) instant chocolate pudding mix
1 carton frozen whipped topping, thawed
4 nestle crunch candy bars, crumbled

Prepare cake mix according to package directions. pour batter into greased 9x13 pan. bake at 350 for 30-35 minutes. cook on wire rack. in a heavy saucepan combine chips, 1/4c milk and cream. cook and stir over low heat till chips are melted. remove from heat, stir in vanilla. cool to room temp. place remaining milk in new bowl, beat in pudding mixes on low speed for 2 minutes. to assemble, crumble half of the cake into 4 qt trifle bowl. layer with half of the peanut butter sauce, pudding, whipped topping and candy bars. repeat layers. cover and refrigerare for at least 3 hours before serving. 12-15 servings.

chocolate chip cheese ball

1 8oz pkg cream cheese
.5 c butter
1/4 t vanilla
2 T cocoa
1 c pwd sugar
4 T brown sugar
1 c choc chips

extra chips to go around ball
chopped walnuts

mix first 7 ingredients, roll into ball shape and coat with chocolate chips and nuts.

apple pound cake

1.5 c oil
2c sugar
3 eggs
3 c sifted flour
1 t salt
2 t vanilla
1 t cinnamon
3-5 large apples, cubed
1 c walnuts

combin oil sugar and eggs. beat for three minutes. blend in flour, salt, soda, cinnamon, and vanilla. fold in chopped apples and nuts. bake in greased bundt pan 350 for 1 hr and 20 minutes. when done, remove from pan and cool 20 minutes.

brown sugar sauce

1 stick butter
.5 c brown sugar
2 T vanilla

mix together, cook over low heat. bring to boil and cook 2 minutes. pour over cake while hot.

Parmesan crusted fish

4 4oz fish fillets
nonstick spray coating
1/3 c mayo
2 T grated parmesan
2 T chives or green onions
/5 t worcestershire sauce

thaw fish, rinse and pat dry. spray a baking dish with spray. mix mayo, parmesan, onions and worcestershire sauce. spread mixture over fish. bake uncovered at 450 for 12-15 minutes.
